Chicken Pot pie

Ingredients

  • 1/2 a whole chicken
  • bag mixed veggies (or two cans)
  • 3 c milk
  • 1 tbls fat (oil, butter, grease)
  • 1 tbls flour
  • salt/pepper/seasoning to taste

Directions

  1. Cook chicken (or use a rotisserie chicken).
  2. To a medium sized pan, add your fat and flour. stir to combine, cook for about 2 minutes, stirring constantly.
  3. Slowly add milk to your flour mixture, stirring thoroughly. Continue until all milk is gone.
  4. Add in veggies and chicken. Stir to combine.
  5. In a deep dish pie plate, lay pie crust on bottom and press into sides of plate. Pour the chicken mixture in the crust, then top with second crust.
  6. Cut steam slits in the top crust, brush with egg wash (or milk) and bake until golden brown, about 40 minutes.
